Sweet Corn and Tomaoto Salad
Serves 4-6
1 cup Fresh Sweet Corn
1 cup Cherry Tomatoes
3 Cups Arugula
Dressing:
1/2 Cup Olive oil
1/4 red wine vinegar
handful of basil leaves
1 Tbsp Dijon Mustard
3 Tbsp Agave syrup
salt and pepper to taste

Directions:Take all the dressing ingredients and put them in blender. Turn on low speed until oil is blended with vinegar. Dressing will look thick. Set aside. Toss all salad ingredients in bowl. Lightly toss salad in dressing and serve! ​
Chef Tip: I like to add goat cheese for a nice flavor explosion.
Fall Chili Recipe
3 cups beans, cooked( I like to use pinto or kidney)
1 onion, diced
2 pounds, Ground beef
1 Bell pepper, diced
1/2 cup Tomato Paste
5 cups Beef stock
1 T. Chili Powder
2 Tsp Coriander
Salt and Pepper to taste

Directions: Combine the ground beef, onion and peppers in sauce pot. Brown until ground beef is cooked through. Add the rest of the ingredients. Simmer for 2-3 hours. Adding water if needed. do not reduce too much. Chili should be thick but not too thick. ​
Chef Tip: I like to add cilantro and chips to mine!
